Wes Ellis Executive Chef / Owner
Born in Little Rock, Arkansas, Chef Ellis’ education includes a BA from the University of Arkansas in Fayetteville and an AAS from the Culinary Art Institute of Louisiana in Baton Rouge.
I am President of W.A. Ellis Enterprise’s and sole producer of Wesley’s Mojo BBQ and Salsa. I spent Several years in Baton Rouge, Louisiana training under chefs of all styles and cuisine learning the backbone of the culinary field. Then I decided to move back to my hometown of Little Rock, Arkansas to further my culinary training. Started a personal chef career in mid 2005 and in 2012 I started the Packet House Grill.
Terra Titsworth Sous Chef
Resides in North Little Rock, Arkansas where she recently completed her AAS degree from Pulaski Technical College Culinary Arts and Hospitality Institute. Previously she received a BA in History from the University of Arkansas at Little Rock. Terra worked as a Research Analyst for the State of Arkansas over the span of ten years. She has been in the culinary field for 6 years and still climbing.
Shane Curly Sauté
Born in Pittsburgh, PA, Shane attended the University of Arkansas, Fayetteville and is a currently studying at Pulaski Tech Culinary School. Shane has worked in the culinary field for three years. He has staged at, Commanders Palace, Restaurant Iris, August, Borgne, Ashley’s and he is currently completing an apprenticeship at Hillcrest Artisan Meat once a week.. Shane’s main focus is classical French Cuisine.
Anthony Thurber Grill
Anthony studied in Texas for many years. Working under many chefs in the Texas and New Orleans, he grew a great talent on the grill. ”Thurber” is our grill man and Butcher
Lauren Rule Chef
Lauren is self taught and loved cooking the old classic favorites with her mother in Searcy. Working as our pastry chef she comes up with unbelievable sweet treats. She also likes meat production such as sausage and cured meats. She truly is a great talent. Lauren has previous employment at Hillcrest Artisan Meats.
